What are Panes con pollo (chicken)
Panes con pollo is what I would say is El Salvador Philly cheesesteak. Made from freshly baked bread panes con Pollo is a meal that you will want to be asking for more and trust I eat like at least 3 of them. Panes con Pollo consists of chicken that is cooked in tomato stew which is then either shredded or almost whole pieces go inside the bread loaf. The pan is then topped with tomatoes, cucumber, reddish, and watercress also known as berro in El Salvador but if you are like me and don't like any of that you can always just get it with chicken and caldo (stew)
How to make Panes con pollo
Ingredients :
- Pan Frances - 5lb of chicken thighs recommended
- Fresh tomato - cucumber
- Garlic - onion
- Radish - watercress
- relajo (Salvadorian spices) - mustard
- mayonnaise
Step 1
In order to make the sauce for the chicken we will roast 8 tomatoes, 5 garlic teeth, and half a onion. You are going to also roast the relajo (Salvadorian spices). Once all of this is roasted you are going to put all of it in the blender and add salt into it before you blend it and your sauce should be done.
Step 2
Add your chicken thighs into a pot with the sauce you made and cook it for 45 minutes straight. Once your chicken is done you gonna remove the chicken from the sauce and do one of two things: either you shred your chicken or you just cut your chicken into tinier pieces. Now you have your chicken ready to just make the pan con pollo.
Step 3
First, you are going to prepare your topping make sure you have washed your cucumber, tomatoes, reddish, and watercress. After that, you cut the tomatoes, cucumber, and reddish into slices. Then you are gonna want to make a mixture of mayo and mustard this will be used as your sandwich spread.
Step 4
To make your pan con Pollo cut your loaf of bread through the middle. Then you are going to spread the mixture of mayo and mustard on the inside of the bread, then stuff your bread with the chicken, and then add your cucumber, tomatoes, reddish, and like 2-3 watercress. Lastly, you can add some of the sauce to your pan to bring more flavor to it.
And voila you got yourself a Salvadoran Pan con Pollo
