Atol de Elote


Alrighty guy, welcome back to traditional bitess today we will talk about Atol de Elote since we are right near the Christmas season and Atol de Elote is extremely popular during this time. Atol de Elote is a drink that is served warm, it is made from fresh corn kernels (and no not from the can I do not condone such a thing) milk, sugar, and spices like cinnamon. Atole is not your everyday drink and the reason for that is because it's almost like a porridge because of the thickness it has once it has finished cooking. But the taste of it is phenomenal and with the smell of cinnamon on top makes the drink even better 

Ingredients 

- 6 ears white corn                            - 1 cup water 
- 3 cups milk                                    -  1 cup white sugar 
- 1 tsp vanilla extract                        - 1 pinch salt 
- 3 tablespoons cornstarch 

Step 1

  1. Fill a large bowl with ice and cold water. Bring a large pot of water to a boil. Add corn and cook uncovered until kernels are slightly softened, 8 to 10 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.

  2. Step 2 

    1. Remove kernels from the cob using a knife and transfer to a blender. Add 1 cup water, or 1/2 cup if blending in two batches, and blend until puréed. Strain the mixture into a bowl using a fine-mesh strainer; discard the solids. Run liquid once more through a clean strainer.

    2. Step 3 

  1. Stir in milk; transfer mixture to a medium nonstick skillet. Cook over medium heat until milk is heated through. Stir in sugar, vanilla extract, and salt; bring to a gentle simmer.

  2. Step 4 

  3. Reduce heat to low and combine 1/4 cup of the hot liquid with cornstarch. Pour mixture into the skillet and stir constantly until atole begins to thicken to desired consistency, about 5 minutes. Immediately remove from heat. Pour into cups and enjoy 

  4. VOILA!!!!!!!!! you've made one of Salvadorian favorite Christmas drink
